Cupcakes Cups

Hey guys! 

When you're looking for a clever way to brighten up a party, consider baking cupcakes & placing them into bright & colorful cupcake cups.  My husband & I made these yesterday for Valentine's Day - even though it was for a party of 3 (hubby, me & our son) I thought it might be fun to try this together! We purchased a fun cupcake cup pack with decorative hearts from Eli's Market here in NYC.  Eli's Market is a great place to get fun & unique sweets for entertaining or just to eat at home! 

How cute are these?

On Valentine's Day...

Valentine's Day should be everyday if you're in a relationship. 

My husband & I are firm believers in keeping L-O-V-E alive by nurturing it daily. We strive hard to place God at the center of our marriage, and even though some days it's not easy, the most important thing is we 'both' keep trying.

This week, my husband & I were practicing making desserts for Valentine's day.  He loves cooking, while I'm more the creative type who likes to decorate them .... we work well together!  Below are the sweets we made, which we'll also be making on V-day!  Hope we can inspire you to show someone...that you LOVE them....whether you have a husband, wife, bf or gf...or you're single.

Remember....love comes in many forms.  Have a Happy Valentine's Day.

Enjoy a good LOVE LETTER? I do! In fact, my husband STILL leaves notes & LOVE letters for me even after many years together.  Paying attention to the small meaningful things is key.

FOOD: Smores CUPCAKES

Hi Made By Girl readers, Amanda here from A Life Well Lived.  Now that Summer is official upon us, I am so excited for all things summer - long days, BBQs and my personal favorite, camping. And of course, no camping is complete without making s'mores. Ooey gooey chocolately s'mores are the stuff that summer is made of in my opinion.




I love the flavor combination of s'mores soo much, that I decided to try them out in cupcake form; graham cracker bottom, chocolate cupcake batter topped with a toasted meringue. Heaven.  This cupcake is the next best thing to sitting by the fire making your very own s'more with the bonus that these can be enjoyed all year long from the comfort of your own home. Campfire is always encouraged but entirely optional.





 S'mores Cupcakes: (Cupcake recipe adapted from Ina Garten's Chocolate Cupcakes)

1 1/2 cups graham cracker crumbs (from about 20 squares)
5 tablespoons unsalted butter, melted
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
2/3 cup granulated sugar
2/3 cup light brown sugar, packed
2 extra-large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup buttermilk, shaken, at room temperature
1/2 cup sour cream, at room temperature
2 tablespoons brewed coffee
1 3/4 cups all-purpose flour
1 cup good cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt 6 egg whites
1 1/2 cups sugar
1/2 teaspoon cream of tartar
1 1/2 teaspoons vanilla extract


Preheat the oven to 350 degrees F. Line cupcake pans with paper liners. In a food processor, pulse graham crackers until finely ground up. Add melted butter and pulse to combine. Place about 1 tablespoon graham cracker mixture in the bottom of the cupcake liners and press to evenly coat the bottom. Bake in oven for about 4 - 5 minutes until golden brown. Let cool while you make the cupcake batter. In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and 2 sugars on high speed until light and fluffy, approximately 5 minutes. Lower the speed to medium, add the eggs 1 at a time, then add the vanilla and mix well. In a separate bowl, whisk together the buttermilk, sour cream, and esspresso.

In another bowl, sift together the flour, cocoa, baking soda, and salt. On low speed, add the buttermilk mixture and the flour mixture alternately in thirds to the mixer bowl, beginning with the buttermilk mixture and ending with the flour mixture. Mix only until blended. Fold the batter with a rubber spatula to be sure it's completely blended. Divide the batter among the cupcake pans. Bake for 20 to 25 minutes or until a toothpick comes out clean. Cool for 10 minutes, remove from the pans then allow to cool completely before frosting.


Make the frosting by combing egg whites, sugar, vanilla and cream of tartar in the bowl of a stand mixer.  Using an oven mitt, place bowl over a stove burner. Turn onto medium heat and whisk egg mixture over medium heat until egg whites are hot, about 4 minutes. Remove from stove  top and place on stand mixture. With a whisk attachment whip egg mixture until it becomes white and fluffy and stiff peaks are formed, about 5 -6 minutes. Place frosting into piping bag fitted with tip of choice  (I actually just cut off the tip of the bag and did not use a tip - but up to you!) Pipe frosting onto cupcakes in desired shape. Toast the frosting using a kitchen torch then sprinkle with crushed graham crackers.

Food: Chocolate Cupcakes & German Vanilla Bean Buttercream

Its Teann here from Teann Ingram Photography bringing you a chocolate dessert! Chocolate is a women's best friend, we eat it when we're happy, sad, grumpy, and excited. It can be savoury, sweet, mixed with spices or just eaten plain. Chocolate is apart of our everyday lives, well mine anyways :)
These chocolate cupcakes are incredibly light, fluffy, and moist. 

Plus, they are so easy to mix together, you have no excuses not to make them! The German buttercream is similar to swiss meringue buttercream, except it's custard based and does not have the strong buttery flavour some people dislike of swiss meringue buttercream. 

 

When you have completely cooled the custard, and have started adding your butter, you may notice the mixture resembling runny scrabbled eggs. This is the moment most people think they are past the point of saving the buttercream and throw out their mixture! Gah! All that delicious buttercream gone. Forever. If only they knew, the buttercream hasn't been ruined at all! The butter just hasn't been fully incorporated! 

This stage doesn't always happen, but I find when my butter is still a little too cold, it will create this texture. So no fear, all you need to do is keep mixing. Easy huh? Patience is key, it usually takes about 10 - 15 minutes of continuous mixing to completely incorporate the butter and what you are left with is...

 

...pure magic. The buttercream should be smooth and light. I suggest tasting it once or twice, or three times. Maybe four.

  I absolutely love using vanilla beans in my icing. The specks of vanilla throughout the icing is so lovely.

  

I made a combination of regular and mini cupcakes. This recipe will make about 12 mini and 14 regular.


Chocolate Cupcakes
1 3/4 cups all purpose flour 2 cups coconut sugar (or white sugar) 3/4 cup unsweetened cocoa powder 1 1/2 tsp baking soda 3/4 tsp salt 2 large eggs 1 cup buttermilk (or fill cup with 1 tbsp white vinegar, fill to 1 cup with milk. Let sit 5 min.) 1/2 cup butter, melted 1 tbsp vanilla extract 1 cup hot coffee (you can use instant coffee too)

Preheat oven to 350 degrees F. Grease muffin tins with butter and flour or line with paper liners. In a large bowl of a stand mixer, mix together dry ingredients. Add eggs, buttermilk, melted butter and vanilla and beat until smooth. Carefully add hot coffee and slowly incorporate. Batter will be runny. Fill muffin tins, 3/4 with batter and place in the oven for 20 - 25 mins. Insert a toothpick and if it comes out clean, the cupcakes are ready. Cool completely before icing.

German Vanilla Bean Buttercream
1 cup whole milk 1 vanilla bean pod, split and scraped with a blunt edge to extract seeds 1/2 cup of honey (or white sugar) 1 1/4 tbsp cornstarch 1 egg 1 egg yolk 1 cup butter, room temperature 1/8 tsp salt
In a medium pot, bring the milk to a simmer along with the vanilla bean seeds and pod. Turn off the heat and set aside for 20 min or as long as time allows.

After steeping, remove the vanilla bean pod. Return milk to a simmer. Meanwhile, whisk together honey, cornstarch, eggs and yolks in a medium bowl. Whisk 1/2 cup of the hot milk SLOWLY into the egg mixture to prevent the eggs from scrabbling. Continuing to whisk add the remaining milk mixture. Return the mixture to the pot and place over medium heat. With a wooden spoon, continuously stir the mixture until it has thickened and is bubbling sluggishly. Stir and cook for another full minute. Take the custard off the heat and place pot in an ice bath. Stir until custard has cooled to room temperate.

Once the custard is at room temperature, using a stand mixer, beat the custard until light and fluffy, about 5 minutes. Start adding the butter in tablespoon increments. If the mixture starts to look like scrabbled eggs, continue adding the butter and once the butter has been added, let the mixer do the work. Mix until smooth about 10 - 15 minutes.

Pink Velvet Cupcakes with Buttercream Frosting

These cake toppers are so adorable! At first glance I thought, "Can I eat those?" - I'm no baker, what did I know?  So, my husband said, "YES Jen, they're totally edible." Phew. 

Well, how do they taste?? They actually seem to blend right into the butter cream frosting, so you're pretty much just tasting the frosting! I LOVE how they were inspired by the classic candy conversation hearts! Remember those??? 


My husband & I made these together - they're called Pink Velvet Cupcakes with Buttercream frosting. He made the butter cream frosting from scratch & I swear it tastes just like Magnolia. These goodies are also part of the Love Letter Mag we put together - you can see it all here.  



Recipe is below- don't miss it!
 


Pink Velvet Recipe


1 cup butter, softened

1 1/4 cups sugar
1/4 teaspoon pink food coloring
3 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk

Swiss Meringue Buttercream

-adapted from Martha Stewart-

5 egg whites

1 cup granulated sugar
1 lb (4 sticks) butter
2 tsp vanilla

In a large bowl, cream the butter, sugar and food coloring until light and fluffy. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition.

Fill paper-lined muffin cups two-thirds full. Bake at 350° for 23-27 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Place egg whites and sugar in a metal electric mixer bowl. Set bowl into a pan of simmering water, and whisk until sugar has dissolved and egg whites are hot to the touch (3 minutes). When its ready, you should feel no sugar granules when you touch it.

Transfer bowl to mixer and use a whisk attachment. Beat on high speed until mixture has cooled completely and formed stiff, glossy peaks (10-11 minutes).

Add the butter, 1/2 bar cut in pieces at a time. Beat until incorporated after each addition. It will initially look curdled but don't worry - it will become smooth again with continued beating. Add vanilla, and beat just until combined.


Change to a paddle attachment, and beat on the low speed to eliminate air pockets (5 minutes). 

Frost the cupcakes then top with the cupcake toppers.

If using the frosting within several hours, cover with plastic wrap and set aside at room temperature in a cool environment. Can be stored refrigerated in airtight container for up to 3 days but bring to room temperature and beat for 5 minutes with paddle attachment before using.

I Love Food Gawker...(Made By Girl)

I have to say....I've been in a CRAZY dessert mood lately. Ever feel that way!?!? 

With sites like Food Gawker it's so hard to not CRAVE sweets! My guy is awesome, he loves making me any dessert I like....I'm so blessed in that sense! SO, for this weekend - which will be over 100 degrees here in Las Vegas, I'm in the mood for something chocolate & frozen!! Can't wait! 

How about you? Any particular dessert you crave during the SUMMER heat?!?

When I go to their site - I end up staying way toooo long. So, watch out, it's ADDICTING if you love food & dessert!

My Mini-Cupcake Ordeal...(Via Made By Girl)

This past weekend I went on a baking RAMPAGE. I tried to bake mini-cupcakes for the FIRST time in my life!! First, I started off with baking cups from Bake it Pretty. I love their cup designs, especially for parties! However, I recommend ONLY baking white cake with these cups so that you can ACTUALLY SEE the designs. I tried some with chocolate & you could BARELY TELL tell how cute the cups really were! Duh.



Not sure what happened here (see below) , but the baking cups started coming away from the cake!! What the!?!? Does anyone know why this happened?!?




I was pretty surprised & it didn't happen once, it happened several times & ALL were minis! I was thinking it was probably this particular baking cup (the blue one with the pink flowers) because it was the ONLY cup that came apart from the cake!


All in all, I think I ended making about 70 mini-cakes because of this issue, so several were DUMPED or given to my dogs. They loved them & didn't COMPLAIN ....



I made 3 different flavors (banana, chocolate & white), below are the banana nut ones. How cute! Of course, I made them from a box, which means they weren't as tasty! 
I should have gotten baking tips from Sonja of Tied with a Bouw blog, she's pretty darn good at baking! My guy made the maple syrup FROSTING for these, he's such a great cook!
 

The mini cupcakes below were just plain CHOCOLATE flavored with a turquoise blue frosting & a piece of a gluten-free OREO cookie on top to adorn it!

After this experience, it's safe to say, I probably won't be baking mini-cupcakes again.....

Baking Mini-Cupcakes This Wknd...(Via Made By Girl)

This weekend I'm going to try & make mini-CUPCAKES for the FIRST TIME EVER!! I've gathered lots of pics for inspiration & I can't wait to start!  I heard that mini-cupcakes tend to get dry quicker than standard sized cupcakes, anyone else heard this??!? 

OMG! I hope this isn't the case, but please leave your comments & any tips you have. I've got 3 flavors I'm going to be making: chocolate, banana & carrot (minus raisins)....can't stand raisins in cake, YUCK!! 


Let's see here...I bought the baking pan, the mix & I also bought several of these amazing baking cups via Bake It Pretty, aren't they gorgeous!? Hope they arrive in time for my cupcakes, if not....I'm DOOMED!  Well, not really...they just won't look as pretty!

Rainbow Cupcakes....Clever!

Even though we talk MOSTLY about Interior Design around here,  I love highlighting CREATIVE and innovative things! So, when Shari from Spearmint Baby introduced me to her rainbow cupcakes, I had to post it. Now, this is such a FUN & exciting recipe to put together with KIDS.....even though I don't have any, I'm certain my husband & I will enjoy trying this in our kitchen!
