FOOD: Strawberry Popsicles with Greek Yogurt

Hi there, Amanda here from A Life Well Lived bringing you an easy, refreshing, and healthy treat just in time for spring strawberry popsicles.  I know these aren't the hardest things to make but sometimes simple is just better.


If you can't tell from my previous posts here on Made By Girl, I like recipes that serve as a foundation for many recipes. Recipes that can be adapted and changed depending on the season, the event, or even my mood. Just like the creme brûlée and the palmiers that I posted here before, these popsicles can be adapted to whatever flavor you want.

As long as the method is the same, you can't go wrong. So, since Spring is upon us and that means the start of strawberry season here in California(not to mention warmer weather!), I thought I would make strawberry popsicles with greek yogurt. Only 4 ingredients to get you to the perfect healthy warm weather treat.


Also, I don't know about you but I love dessert. I mean love it so much that I need to have something sweet after every meal. These popsicles are not only easy but they are also healthy so I won't feel guilty if I eat one or three at a time. If you want to switch up the flavors, you can try watermelon in the summer or peaches or maybe even cantaloupe or mango. Whatever fruit you can blend can be made into popsicles.










Strawberry Popsicles with Greek Yogurt:
  • 1 8-oz containers of vanilla yogurt
  • 1 lb carton of strawberries, hulled
  • 1/4 cup honey
In a blender, blend together the yogurt, berries, and honey until smooth. Pour into the popsicle molds. Press on the lids and transfer to the freezer to freeze overnight. Makes 12 popsicles.

Coconut Milk Dark Chocolate Popsicles

The other day I posted a picture on my Instagram of a popsicle that my husband made for me. It got a lot of you asking for the recipe! 

Well, LUCKY you, my HUSBAND is now sharing the recipe here on MadeByGirl - just keep reading below! Please feel free to pin these lovely pics so others can try this delicious popsicle as well! This dessert is perfect for the 4th OF July - it is low calorie & dairy free.  Can't beat that!



How to make:




 Let's begin:


  • 2 1/2 cups of coconut milk like Silk (brand) Coconutmilk
  • 1 bar of Green & Black's 70% dark chocolate OR 1 bar of G&B 85% plus 1/4 C sugar
  • 1/4 C sugar
  • 2 Tbs flour or gluten free flour
  • 1/2 C water
  • 2/3 C sweetened dark cocoa powder

Put all ingredients into heavy saucepan and bring to boil over medium heat, whisking with constant motion. Drop heat to medium-low and allow ingredients to thicken slightly, about 5-6 minutes, whisking evenly the whole time. Do not allow it to clump on the bottom or it will burn.

Cool for 5 minutes then pour mix into popsicle molds, using a funnel if necessary or by transferring in batches into a measuring cup with a pouring lip. Volume will not increase while freezing, so it can be poured right up to the lip of the mold. Freeze for at least 5 hours before serving. Makes 6-8 standard sized popsicles.

Food: Cappuccino-Cocoa Nib Popsicles

My husband is the coolest. 

He loves making great meals (slash) desserts for me. Lately one of my favorite things he's made are popsicles. He is DETERMINED to make as many different types of flavors! So far, he's whipped up some blueberry yogurt, cappuccino, coconut & plum flavors! 

Today I wanted him to guest post on MadeByGirl & show you how cute this recipe is. Enjoy!


Hello ladies (& guys) - Jen loves both coffee & chocolate so I thought this would be a neat way to get both into a nice, cool treat for her.  Love when I can make her smile. 

Here's how to make these delicious popsicles.
 



Ingredients:

4 shots espresso
1 1/2 C vanilla soy milk
1/4 C agave
1 tsp pure vanilla extract
1 tsp coffee extract
1/4 C cocoa nibs

Ok, let's make it:
 
While making the espresso, froth the milk. We made these using a Nespresso with the Aeroccino on the cold setting but you can also make them with a hand frother or even whipping the milk with a whisk.  Put all the liquid ingredients into a small pitcher and mix together.  Fill each mold half way with the mix, then add 2 tsp of nibs.  


Fill the molds up the rest of the way and freeze. Note that this method, most of the nibs will eventually sink so they will be at the top of the popsicle. 

If you want to have them mix evenly, first freeze the mix until it becomes slushy, add the nibs to the mix and then pour or spoon it into the molds for final freezing. Makes 6 popsicles.

By the way - these are Tovolo molds that we got at Basics Plus.
